One handed breakfast ideas

So even if you’re already in the car on the way to the office, you’ve no reason not to enjoy these high protein and downright delicious breakfast snacks.
Brilliant in Beetroot
Beetroot, olive oil, tahini, parsley
For a dear friend of mine with a peanut allergy, I love this beetroot dip which has sweetness and nuttiness in spades. You can buy pre-cooked beetroot, but I prefer to peel some fresh beets, roast them in a baking tray the night before and then blitz up fresh in the morning with an immersion blender. Add cup of cooked beetroot, 1/4 cup olive oil ¼ cup tahini to blender. Blend until puréed. Spread on toast. Add chopped parsley on top as garnish.
Mamma Mia!
Cream cheese, basil, tomato, chives
This sugar free snack is ready in a matter of moments. Slice some cherry tomatoes, spread cream cheese on your toast, add basil leaves, tomato slices, salt, pepper & finely chopped chives. Delicious!
Sundried Side Up
Sundried tomato, garlic, olive oil, dried chilli flakes, parsley
Forget tricky eggs that leak out of rolls, simply add 1 cup sundried tomatoes, half cup olive oil, 1 tsp chilli flakes, 2 cloves garlic to blender. Spread on toast. Garnish with chopped parsley. This vegan breakfast is perfect for anyone who like big, punchy savoury flavours in the morning.
Perfect Pea Purée
Pea purée, mint & fetta
Again, this a night-before job (who could be bothered with boiling hot stock before lunchtime), but will only take a few minutes to prepare. Add 1 cup peas (frozen is fine), ¼ cup good quality vegetable stock, some salt & pepper in a pot and bring to the boil. All to cool slighty, then add to blender and purée and chunky and spreadable. In the morning, spread on toast and top with fetta and mint.
Morning Mushroom Medley
Sour cream, mushroom & cumin
Sour cream and mushrooms keep this healthy breakfast still feeling very luxurious and silky. Cook 1 cup mushroons with a little olive oil, 1 tsp cumin powder, salt and pepper. Spread sour cream on toast, add mushrooms, and garnish with a sprinkle of some extra cumin powder and salt and pepper.
