Have you tried sweet potato toast yet?

This little food hack couldn’t be simpler, and it’s a great idea for a quick healthy snack or a light breakfast. If you’re looking to mix it up from simple carbs like bread, if you have a sweet tooth, if you want to eat more veggies but hate cooking? Boy is this the solution for you.
Simply take your sweet potato and give it a wash (no need to peel), then cut into thin slices, about half an inch thick. Too thick and the sugar in sweet potato can burn before the centre has time to soften and cook, so keep it thin and crispy. Then… are you ready? Pop them in the toaster. That’s it. Test with a fork and if the toast feels to firm, simply pop it back in the toaster!
Voila – now for the fun part!
You can top your sweet potato toasts with anything you’d like – avocado is a popular choice – but we’ve given you two combinations here to really tickle your tastebuds as well.
For absolute nuttiness, try topping with a spread of tahini, some crushed hazelnuts, a drizzle of honey (maple syrup will work as well if you’re keeping everything vegan), and finish with a sprinkle of white and black sesame seeds.
If savoury is more your thing, try a thick layer of chevre goats cheese, thinly sliced beetroot and daikon (aka white radish, but you already knew that), and finish with watercress and a good grind of black pepper.

I think there’s a typo in the recipe… I cant imagine toasting a 1 inch thick sweet potato in my toaster!!
Good spotting Nat. Try half an inch thick pieces – your toaster will probably prefer it!
