Zesty Asian Prawn Subs

Ingredients for two people
2 | sourdough rolls |
1 knob | ginger, grated |
1 | long red chilli, deseeded & finely diced |
2 | garlic cloves, peeled & crushed |
2 tbs | olive oil |
300 g | prawns |
1 | carrot, julienned |
1 | cucumber, julienned |
1 bunch | spring onions, sliced diagonally |
1 small handful | coriander, roughly chopped |
2 tbs | mayonnaise |

For the bread
Place the bread in the oven for 8-10 minutes or until it is crispy and golden. While the bread is baking you can cook your prawns.
For the prawns
In a large bowl combine the ginger, chilli, garlic, and olive oil. Toss the prawns in and make sure they’re covered with the simple marinade. You could let these marinate in the fridge for 15 minutes. If you just can’t wait that’s not a problem, just get cooking!
Heat a large pan over a high heat and cook the prawns for 5 minutes or until they change colour and are completely cooked through (they’re really not good raw!).
To serve
Assemble your prawn subs by layering the prawns, carrot, cucumber, spring onions, coriander, and a dollop of mayonnaise on your freshly baked bread.
