Uncle Bill’s Balsamic Steak Salad
August 21, 2014A delicious way to get a fantastic dose of greens – this steak salad is a definite winner!
Ingredients for two people
300 g | potatoes, cut into 1 inch pieces |
2 | rump steak |
1 tbs | dijon mustard |
2 tbs | balsamic vinegar |
2 tbs | olive oil |
80 g | green beans |
80 g | salad mix |
1 bunch | spring onions, sliced diagonally |
1 small handful | parsley, roughly chopped |

This is a classic recipe from our Accountant’s great uncle – simple yet satisfying. It’s an old guy’s take on meat and veggies – we think it’s rather good!
For the vegetables
Add the potatoes to a pot of salted water. Bring to the boil and cook for 13 minutes, then throw in the beans and blanch thee for 2 minutes. Remove the pot from the heat when the potatoes are tender and the beans are bright green and crisp. Drain the potatoes and bean then set them aside.
For the steak
Season the steaks in a mixture of half the balsamic vinegar and generous grinds of salt and pepper. Heat a BBQ or griddle to a high heat and cook steaks for 3-4 minutes each side for rare or until cooked to your liking. Transfer to a plate, cover in foil and allow to rest for 5 minutes.
For the vinaigrette
For the mustard vinaigrette, whisk all the mustard, remaining balsamic vinegar, and olive oil in a small bowl and season to taste with sea salt and pepper.
To serve
Combine the potatoes, beans, mixed leaves, spring onion and toss with the vinaigrette. Top the salad with thinly sliced steak and scatter with parsley.
