Pork with White Beans & Salsa Verde
September 29, 2014A modern spin on an ancient recipe, this porky number is as healthy as it is delicious!
Ingredients for two people
1 handful | parsley, roughly chopped |
1 handful | basil, roughly chopped |
1 tub | capers |
1 tsp | dijon mustard |
1 | garlic clove, peeled & crushed |
4 tbs | olive oil |
1 | lemon, juiced |
450 | pork tenderloin |
1 | red onion, sliced |
1 tin | cannellini beans, drained & rinsed |

Preheat the oven to 200C.
For the salsa verde
Blend the parsley, basil, capers, mustard, and half of the garlic, oil, and lemon juice until finely chopped and combined.
For the pork
Heat some oil in a pan over high heat. When hot, add the pork to the pan and sear on all sides for 2 minutes so it stays moist while it is cooking. Place on a lined tray and pop in the oven and cook for 12-15 minutes or until cooked to your liking.
For the beans
While the pork is cooking, heat the remaining oil in a frying pan over a medium heat and sauté the onion for 2 minutes until it has softened but still retains that lovely colour, then add the remaining garlic and continue to cook for a further 2 minutes. Add the beans and cook them for 4 minutes until heated through. Toss in the remaining lemon juice.
To serve
Slice the delicious pork and serve with the warm cannellini beans and a drizzle of the salsa verde. Enjoy!
