Mushroom Udon Soup

    A soup exploding with exotic flavours which will excite your taste buds and warm your belly.


    Ingredients for two people

    90 gudon noodles
    1 Lboiling water
    1 packetvegetable stock
    1 tbsmiso paste
    1 bunchbok choy, roughly chopped
    1 bagbutton mushrooms
    1capsicum, sliced
    1long chilli, deseeded & sliced
    1 bunchspring onions, thinly sliced
    1 tbssoy sauce

    For the noodles

    Bring a large pot of salted water to the boil and cook the noodles for 5 minutes or until tender. Drain, rinse and then set aside.

    For the soup

    Pour the boiling water into a large pot over a medium heat and add the vegetable stock, miso paste,  bok choy, mushrooms, capsicum, half of the chilli and spring onions. Simmer for 3-5 minutes or until the vegetables are tender but still have a bit of crunch to them. Add the noodles to the pot and simmer for a further 2 minutes, just to heat the noodles through.

    To serve

    Divide the delicious miso noodle soup between bowls with a garnish of the remaining spring onions and chilli if you can take the heat! We love to add an extra kick with a drizzle of soy sauce. Why not give that a try yourself?
