Mushroom Udon Soup

Ingredients for two people
90 g | udon noodles |
1 L | boiling water |
1 packet | vegetable stock |
1 tbs | miso paste |
1 bunch | bok choy, roughly chopped |
1 bag | button mushrooms |
1 | capsicum, sliced |
1 | long chilli, deseeded & sliced |
1 bunch | spring onions, thinly sliced |
1 tbs | soy sauce |

For the noodles
Bring a large pot of salted water to the boil and cook the noodles for 5 minutes or until tender. Drain, rinse and then set aside.
For the soup
Pour the boiling water into a large pot over a medium heat and add the vegetable stock, miso paste, bok choy, mushrooms, capsicum, half of the chilli and spring onions. Simmer for 3-5 minutes or until the vegetables are tender but still have a bit of crunch to them. Add the noodles to the pot and simmer for a further 2 minutes, just to heat the noodles through.
To serve
Divide the delicious miso noodle soup between bowls with a garnish of the remaining spring onions and chilli if you can take the heat! We love to add an extra kick with a drizzle of soy sauce. Why not give that a try yourself?
