Mushroom quesadillas
October 1, 2013These traditional cheesy quesadillas incorporate the unexpected but delicious taste of mushrooms.
Ingredients for two people
1 tbs | butter |
2 | garlic cloves, crushed |
300 g | button mushroom, sliced |
1/4 cup | parsley, chopped |
4 | flour tortillas |
200 g | cheddar cheese, shredded |
2 | tomatoes, chopped |
1 | avocado |
1/2 | lemon, juiced |

For the mushrooms
Heat the butter in a pan to medium heat. Add the garlic and cook for 1 minute, then add the mushrooms and the parsley and continue to cook for a further 5 minutes or until soft. Set aside.
For the tortillas
Heat a large pan to medium heat. To cook each quesadilla place a tortilla in the pan, and divide mushrooms and cheese in accordance with how many quesadillas you’re making. Top with a second tortilla and cook for 2 minutes on each side, as if you’re making a toasted sandwich. Move to a warm resting place with you cook the remaining quesadillas.
For the guacamole
Mash the avocado with a fork in a small bowl, add the tomatoes, lemon juice, and season with salt and pepper.
To serve
Divide the quesadillas between the plates and serve with a good dollop of guacamole.
