Chopped greek salad
October 2, 2013We have a lot to thank the Greeks for, and this healthy chopped salad is no exception!
Ingredients for two people
3 | tomatoes, finely chopped |
3 | lebanese cucumbers, finely chopped |
1 | red onion, finely chopped |
100 g | pitted olives, finely chopped |
100 g | marinated feta, crumbled |
3 tbs | fresh parsley, finely chopped |
3 g | dried oregano |
3 tbs | olive oil |
1 tbs | balsamic vinegar |

For the salad
The whole joy of a chop salad is that you should be able to eat it with a spoon, almost like cereal. For this recipe we chopped everything really fine – in about 1/2 cm size cubes. It’ll surprise you how different – even better – this makes this classic salad.
Combine all the chopped ingredients in a large bowl.
Make the dressing by combining the oregano, olive oil, balsamic vinegar and a good pinch of salt. Mix well and add to the salad.
To serve
Gently toss the salad with your hands or salad servers. Enjoy.
