Chopped greek salad

    We have a lot to thank the Greeks for, and this healthy chopped salad is no exception!

    Chopped greek salad

    Ingredients for two people

    3tomatoes, finely chopped
    3lebanese cucumbers, finely chopped
    1red onion, finely chopped
    100 gpitted olives, finely chopped
    100 gmarinated feta, crumbled
    3 tbsfresh parsley, finely chopped
    3 gdried oregano
    3 tbsolive oil
    1 tbsbalsamic vinegar

    For the salad

    The whole joy of a chop salad is that you should be able to eat it with a spoon, almost like cereal. For this recipe we chopped everything really fine – in about 1/2 cm size cubes. It’ll surprise you how different – even better – this makes this classic salad.

    Combine all the chopped ingredients in a large bowl.

    Make the dressing by combining the oregano, olive oil, balsamic vinegar and a good pinch of salt. Mix well and add to the salad.

    To serve

    Gently toss the salad with your hands or salad servers. Enjoy.
