We have a lot to thank the Greeks for, and this healthy chopped salad is no exception!
Ingredients for two people
|3||tomatoes, finely chopped|
|3||lebanese cucumbers, finely chopped|
|1||red onion, finely chopped|
|100 g||pitted olives, finely chopped|
|100 g||marinated feta, crumbled|
|3 tbs||fresh parsley, finely chopped|
|3 g||dried oregano|
|3 tbs||olive oil|
|1 tbs||balsamic vinegar|
For the salad
The whole joy of a chop salad is that you should be able to eat it with a spoon, almost like cereal. For this recipe we chopped everything really fine – in about 1/2 cm size cubes. It’ll surprise you how different – even better – this makes this classic salad.
Combine all the chopped ingredients in a large bowl.
Make the dressing by combining the oregano, olive oil, balsamic vinegar and a good pinch of salt. Mix well and add to the salad.
Gently toss the salad with your hands or salad servers. Enjoy.
