Capers & Lemon Fish en Papillote
August 12, 2014Cooking en papillote is as delicious as it is impressive, and unexpectedly simple.
Ingredients for two people
2 sheets | baking paper, large rectangle as pictured |
2 | fish fillets |
40 g | capers |
1 | lemon, juiced & zested |
2 | garlic cloves, crushed |
2 tbs | butter, roughly chopped |
1 small handful | parsley, chopped |
1 bag | potatoes, peeled & chopped |
80 g | mixed salad, washed |

For the fish
Pre-heat the oven to 180°C. Set out one piece of baking paper for each fillet. Place fish on the baking paper and divide the capers, lemon zest,garlic, and half the butter and parsley between each fillet. Enclose your fillets by folding the paper in the method pictured below and place on a baking tray. Bake in the oven for 12-15 minutes.
For the potatoes
Place the potatoes in a pot of well salted water, bring to the boil, and cook for 12-15 minutes or until soft. Strain and leave aside to cool.
While the potatoes are still slightly warm add the remaining butter and parsley and season well with salt and pepper.
To serve
Remove the papillote from the oven and carefully open the parcel, garnish with a squeeze of fresh lemon juice and salt to taste. Serve with the potatoes and a side of mixed salad.
