Winter Pasta Bake
July 25, 2014A hearty Italian dish which is sure to leave you warm and completely satisfied.
Ingredients for two people
250 g | penne pasta |
1 tbs | olive oil |
1 | brown onion, finely diced |
350 g | beef mince |
2 | garlic cloves, peeled & crushed |
1 tsp | chilli flakes (optional) |
1 tin | diced tomatoes |
1 small handful | basil, roughly chopped |
1 ball | buffalo mozzarella, torn |
25 g | breadcrumbs |

We suggest that you prepare the pasta and mince filling simultaneously, this will help you to combine all of the parts at once and get the dish into the oven as soon as possible so that you can enjoy your hot meal with little delay!
For the pasta
Preheat the oven to 200ºC. Bring a large pot of salted water to the boil. Cook the pasta for 9 minutes or until al dente. Drain and rinse the pasta so that it doesn’t stick together.
For the filling
While the pasta is cooking, heat some oil in a pan over a medium heat and cook the onion for 4-5 minutes until it becomes glossy. Add the mince, garlic, and chilli flakes (if using) to the pan and season with the oregano, salt and pepper. Cook for a further 6-8 minutes until the meat is no longer pink, stirring the mince to break it up.
Add the diced tomatoes to the pan and cook for 1-2 minutes, just so the tomatoes reduce slightly. Throw the cooked pasta, basil, and half of the mozzarella cheese to the pan and toss until combined. Lay the mixture in a large oven proof baking dish and sprinkle with the remaining mozzarella and the breadcrumbs. Bake for 12-15 minutes in the oven until the cheese melts and the breadcrumbs are brown.
To serve
Be careful when removing the hot dish from the oven and serve up this delicious baked meal!
