Indian Spiced Cauliflower Pilaf

    A warming, aromatic, and nutritious Indian inspired dish that you can’t not love!


    Ingredients for two people

    1 tbsolive oil
    1brown onion, diced
    1 bagHelloFresh spice blend
    150 grice
    1/2 headcauliflower, roughly chopped
    1 tinchickpeas, drained & rinsed
    500 mlboiling water
    1bay leaf
    1 small handfulCoriander, roughly chopped
    1 tubyoghurt

    For the pilaf

    Heat the oil in a large pan that has a lid over a medium heat, cook the onion for 4-5 minutes or until golden and glossy. Add in the HelloFresh spice blend to the pan and stir for 1 minute until fragrant.

    Add the rice, cauliflower, and chickpeas to the pan and stir through to coat in the paste then pour in the boiling water and add the bay leaf to the pan. Cover the pan and let it simmer for 15 minutes or until the rice fluffy and the cauliflower is tender. If you feel that there is not enough liquid to cook the rice, feel free to add more boiling water as you go.

    To serve

    Serve your spicy pilaf with a dollop of yoghurt and freshly chopped coriander (if you like).
