Indian Spiced Cauliflower Pilaf

Ingredients for two people
1 tbs | olive oil |
1 | brown onion, diced |
1 bag | HelloFresh spice blend |
150 g | rice |
1/2 head | cauliflower, roughly chopped |
1 tin | chickpeas, drained & rinsed |
500 ml | boiling water |
1 | bay leaf |
1 small handful | Coriander, roughly chopped |
1 tub | yoghurt |

For the pilaf
Heat the oil in a large pan that has a lid over a medium heat, cook the onion for 4-5 minutes or until golden and glossy. Add in the HelloFresh spice blend to the pan and stir for 1 minute until fragrant.
Add the rice, cauliflower, and chickpeas to the pan and stir through to coat in the paste then pour in the boiling water and add the bay leaf to the pan. Cover the pan and let it simmer for 15 minutes or until the rice fluffy and the cauliflower is tender. If you feel that there is not enough liquid to cook the rice, feel free to add more boiling water as you go.
To serve
Serve your spicy pilaf with a dollop of yoghurt and freshly chopped coriander (if you like).
