Super Terrific Thai Beef Salad
November 14, 2014A nutritious and iconic HelloFresh salad that’s so packed full of flavour it will leave you grinning all week long.
Ingredients for two people
2 | rump steak |
2 | cucumber, halved lengthways & sliced |
1 | chilli, desseded & diced |
1 bunch | spring onions, chopped |
1 punnet | cherry tomatoes, halved |
1 handful | mint, roughly chopped |
1 tbs | fish sauce |
1/2 | lemon, juiced |
1 tbs | brown sugar |
2 tbs | soy sauce |
2 | garlic cloves, peeled & crushed |

For the beef
Heat a griddle or pan to a high heat and add a dash of vegetable oil. Season your rump steaks. Once your oil is smoking hot add your steak and cook for 2-3 minutes on either sie for medium-rare (or longer, until cooked to your preference). Cooking time will depend on the thickness of your steak. Wrap beef in foil and set aside to rest.
For the salad
Combine the cucumber, chilli, spring onion, cherry tomatoes, and mint in a large bowl. In a separate bowl whisk together the fish sauce, lemon juice, sugar, soy sauce, and garlic for the dressing.
Slice your steak into thin strips. Keep the juices to add into the salad, it’s full of flavour!
To serve
Arrange the salad on the bottom of the bowl, then top with the sliced beef and dressing to serve.
