Coorg Curry with Fresh Coriander & RiceNovember 17, 2014
An authentic Indian curry which incorporates pork and traditional hot flavours in an easy to follow recipe.
Ingredients for two people
|2 tbs||vegetable oil|
|1||pork steak, sliced|
|1 knob||ginger, peeled & grated|
|1||garlic clove, crushed|
|1||chilli, deseeded & finely chopped|
|1 tbs||HelloFresh curry powder|
|1 cup||hot water|
|1 small handful||coriander, roughly chopped|
For the pork
In a large casserole dish or pan, heat some vegetable oil over a medium-high heat. Add the pork and cook for about 3-4 minutes or until golden. Transfer to a plate.
For the curry
In the same pan, add the ginger, garlic, and chilli and cook over a high heat for about 2 minutes, or until fragrant. Add the curry powder and cook, stirring continually, until well combined. Add tomatoes, yoghurt, and water then reduce heat to a low simmer. Season with salt and pepper, throw in the pork and let it bubble away slowly for about 15 minutes.
For the rice
Meanwhile, place the rice in a sieve and run under cold water, the water will initially become cloudy. Keep rinsing until the water becomes clear enough (it doesn’t have to be crystal). Bring a large pot of salted water to the boil. Add the rice and cook it for about 10-12 minutes or until it is soft and cooked. Drain.
Divide the rice into the bowls and spoon over the Coorg curry, top with a sprinkling of coriander, if you so desire!
