Coorg Curry with Fresh Coriander & Rice
November 17, 2014An authentic Indian curry which incorporates pork and traditional hot flavours in an easy to follow recipe.
Ingredients for two people
2 tbs | vegetable oil |
1 | pork steak, sliced |
1 knob | ginger, peeled & grated |
1 | garlic clove, crushed |
1 | chilli, deseeded & finely chopped |
1 tbs | HelloFresh curry powder |
2 | tomato, diced |
1 tub | yoghurt |
1 cup | hot water |
1 cup | rice |
1 small handful | coriander, roughly chopped |

For the pork
In a large casserole dish or pan, heat some vegetable oil over a medium-high heat. Add the pork and cook for about 3-4 minutes or until golden. Transfer to a plate.
For the curry
In the same pan, add the ginger, garlic, and chilli and cook over a high heat for about 2 minutes, or until fragrant. Add the curry powder and cook, stirring continually, until well combined. Add tomatoes, yoghurt, and water then reduce heat to a low simmer. Season with salt and pepper, throw in the pork and let it bubble away slowly for about 15 minutes.
For the rice
Meanwhile, place the rice in a sieve and run under cold water, the water will initially become cloudy. Keep rinsing until the water becomes clear enough (it doesn’t have to be crystal). Bring a large pot of salted water to the boil. Add the rice and cook it for about 10-12 minutes or until it is soft and cooked. Drain.
To serve
Divide the rice into the bowls and spoon over the Coorg curry, top with a sprinkling of coriander, if you so desire!
