Spring has well and truly sprung, and we feel the temperature rising! With summer just around the corner, we thought it was the perfect time to showcase some of our show stopping salads from 2018! After all, summer time equals salad time!
After all, salads could use a little spotlight on them as they definitely don’t get the praise they deserve. I think there’s a big misconception when it comes to salads, that they aren’t filling enough, they aren’t a “proper” meal (they’re just a side) and it’s just a bunch of lettuce, tomato and cucumber with a little olive oil and balsamic vinegar. Well we’re here to tell you (and show you), that this is most definitely not the case and that salads can and are in fact…filling, a “proper” meal and don’t just have to have the same four ingredients.
Salad’s = cold ingredients, right? Well, this isn’t always the case. Take this gorgeous dukkah roast veggie and haloumi salad for example. A perfect combination of cooked beetroot, sweet potato and haloumi with a fresh base of mixed salad leaves and fresh coriander chimichurri dressing. Delicious!
When it comes to making a tasty salad, it’s all about the little things. With the addition of dried cranberries, flaked almonds, Dijon mustard, creole spice blend and fetta, this chicken toss gets taken to the next level. Remember, flavour is key!
Similar to the recipe above, this Malaysian Tofu salad has an incredible blend of flavour that will have your taste buds jumping with joy. From a ginger dressing and crispy shallots, to crushed peanuts and sweet chilli pumpkin…I mean, need I say more?
Beef is a great choice of protein to bring a salad to life and with a kick of middle eastern, the Zaatar flavouring takes it up that extra notch! Topped with fetta and crispy, golden panini bites, this salad will have you savouring every last bite.
This vegetarian dish heroes our root veggies and provides all sorts of textures and flavours for you to enjoy. The mustard dressing featuring the oil from the marinated goat’s cheese, dijon and vinegar (I suggest balsamic), really complements the roasted veggies and coats the dish to perfection.
Tandoori chicken is always a good idea and creates a delicious flavour for this salad bowl! With the addition of a garlic yoghurt dressing, crushed peanuts and fresh veggies, you’ll be licking the bowl clean.
Ready in just 30 minutes, this quick and easy basil haloumi salad is refreshing and refuelling. Topped with a boiled egg and potatoes, it’s a delicious combo that you’ll want to make again and again!
