Our favourite dishes for a summer BBQ!
December 12, 2018We asked around at HelloFresh HQ to see what our foodie friends are cooking up for their summer festivities. Read on for some barbecue inspiration…but be warned, it’s a step up from the good ol’ sausage sizzle!

Favourite summer dish: Caramelised Peach and Goats Cheese Salad
We were correct in expecting delicious things from Hannah. Her team is responsible for all the yummy things in your boxes every week. This is a salad we could eat all summer long!
Hannah says: “My go-to dish for gatherings with friends and family is the Caramelised Peach and Goats Cheese Salad. It’s as easy as charring the peaches on the grill, and tossing together with rocket, goats cheese and adding a crunchy element like almonds or seeds. It’s great alongside some pan-fried salmon for the ultimate summer dish!”

Favourite summer dish: Grilled Corn with Chipotle, Lime Butter and Manchego
Paddy is all about big punchy flavours and jazzing things up to be extra special! This time, he’s taken on the BBQ classic – corn on the cob. Good thing Paddy is used to writing and sharing his awesome recipes, because we think this one is an absolute must for all summer entertaining!
Paddy’s Recipe: Grilled Corn with Chipotle, Lime Butter and Manchego
1. Pull back the husks (leaving them on because they sort of burn away and look “cool” – obviously!).
2. Throw them on the BBQ until charred all over. In the meantime, mix mayonnaise, chipotle powder (or sauce), lime juice and zest, and salt and pepper together then spread over a serving platter.
3. When the corn is nicely charred, transfer into the mayo and roll them around a little.
4. Finely grate over the manchego, a bit of red chilli and coriander as a garnish to finish.
So, there you have it – jazzed up corn, Paddy’s way!

Favourite summer dish: Chilli and Garlic Prawn Skewers
Greta is a huge fan of prawns on the barbie and with a little bit of preparation, they make for a super easy dish that can be thrown on the BBQ when you’re ready and everyone loves them! Greta’s serves them a little bit rustic.
Greta says: “I would buy them fresh, peel and skewer a couple and then pre-marinate in chilli, garlic and a fresh herb like parsley. Then pop them on the grill until lightly charred and serve on a platter with a few wedges of lemon and another sprinkle of fresh herb. Perfection!”
Bonus Tip: Pre-soak your bamboo skewers may help avoid them burning to a crisp, or opt for some metal ones if you think you’ll be using them often enough!

Favourite summer dish: Pork sausages or spare ribs (and a big fresh salad!)
We can trust Tom to pick a keeper when he meets one! And when it comes to his summer barbecuing Tom likes to stick with the classic crowd pleasers.
Tom says: “It’s a very hard choice between spare ribs and high-quality organic pork and herb sausages, with corn on the cob, a spicy coleslaw and salad with cherry tomatoes – I’m pretty basic to be honest.”
We think we’ll try and snag an invite to his next barbie – this guy knows how to put on a spread! We dug into our archives and found this salad recipe which incorporates the tomatoes and everyone’s favourite – haloumi cheese!
Bonus Tip: Haloumi is also perfect when cooked on the BBQ and served with a good squeeze of fresh lemon!
