Marrakesh Prawns with CouscousNovember 10, 2014
Our exclusive Marrakesh couscous creation perfectly accompanies fresh prawns – they look and taste exquisite!
Ingredients for two people
|1||lemon, juiced & zested|
|2||garlic, cloves, peeled & crushed|
|2 tbs||olive oil|
|2 tsp||HelloFresh Moroccan spice mix|
|70 g||rocket, washed|
For the marinade
In a bowl combine the lemon zest, garlic and oil. Mix until well combined. Add the prawns and toss to coat. Allow the prawns to marinate for 3-5 minutes.
For the couscous
Place the Morrocan spice and couscous in a bowl and boil some water (the water has to be double the amount of your couscous). Pour the water over the couscous, stir with a fork, and cover the bowl tightly with cling wrap, leave to sit for 5 minutes. Remove wrap and then fluff the couscous with a fork.
For the prawns
Preheat a griddle on medium high heat. Add a good dash of olive oil and add the prawns and tomatoes. Cook for 2-3 minutes each side until they are evenly cooked.
Remove the prawns and tomatoes from the griddle and combine with your couscous and rocket. Serve with a squeeze of lemon juice, if you like.
