Five spiced chicken

    An Asian sensation that’s wonderfully aromatic, nutritious, and enjoyable to whip up.


    Ingredients for two people

    2 tbsvegetable oil
    2 tbssoy sauce
    1 tbswhite vinegar
    1 tbsbrown sugar
    1ginger, grated
    2garlic cloves, crushed
    2 tspHF 5 spice mix
    350 gchicken thigh fillets, cut into thirds
    150 grice
    1bok choy
    2 stemsspring onion, finely chopped
    1long red chilli, de-seeded and finely chopped

    For the chicken

    In a bowl combine the vegetable oil, soy sauce, white vinegar, brown sugar, ginger, garlic, and the HF 5 spice mix, and mix well. Add the cut chicken tight pieces to the bowl and stir until well coated.

    Head a frypan over a medium-high heat. Add the chicken to the pan and cook for 5 minutes on each side. When done the pieces should be slightly caramelised on the outside and moist on the inside. Meanwhile, begin on the rice and bok choy.

    For the rice & bok choy

    Bring a large pot of salted water to the boil. Add the rice and cook for 10-12 minutes or until the rice is cooked. In the last minute of cooking the rice, add the bok choy to the boiling water and cook for 1 minute. Remove the bok choy from the water and transfer to a plate, then strain the rice.

    To serve

    Divide the rice between bowls and top with the baked five spice chicken pieces. Garnish with the finely chopped spring onions and chilli. Serve with a side of bok choy and enjoy!
