5 twists on classic corn on the cob recipes

 Five corn cobs, alike in dignity. But which of our 5 twists on the classic corn on the cob will be your favourite?

There’s something for everyone in these corn on the cob recipes. Whether you’ve got a sweet tooth or a desire for fire, deliciousness awaits! In case you’re not sure how to cook corn on the cob, we began by cooking all of our ears of corn in boiling water for 5 minutes, before removing and adding their rubs and flavours. You could also steam them for the same amount of time. To get some burnished bits, simply whack into a griddle pan for a few minutes on a high heat afterwards!

1. Mexican

The crowning glory of our Mexican inspired rub is Cotija cheese, a dry firm cheese from Mexico. If you can’t get your hands on it, a firm Greek fetta will also do the job.

You’ll Need

  • Whole egg mayonnaise
  • 1 lime, zested and juiced
  • coriander, roughly chopped
  • Paprika
  • Cotija cheese

In a bowl, combine the mayonnaise and lime juice. Rub into the corn kernels, then cook on a griddle or BBQ for a few minutes. Remove and top with coriander, paprika, lime zest and Cotija.

2. Indian

Simple and aromatic, this unusual combination of corn with traditional Indian flavours is one of our favourite fusions.

You’ll Need

  • Coconut oil
  • Curry powder (whichever type you prefer)
  • Sesame seeds, toasted
Rub the corn with coconut oil, then sprinkle with your favourite curry powder and sesame seeds. You could also use a curry paste for this!

3. North American

The simplicity of buttered corn with a hint of something sweet from our Canadian friends…

You’ll Need

  • Salted butter
  • Good quality maple syrup
This one really couldn’t be easier. Simple slather in butter as per usual, then complete with a drizzle of maple syrup. Delicious!

5. Asian

One for the heat lovers out there.

You’ll Need

  • Hoisin sauce
  • Spring onions, chopped
  • Chilli flakes (as many as you can handle!)
Rub with hoisin sauce, then garnish with spring onions and chilli flakes.

5. Italian

Full disclosure, the sweetness of the corn with the savoury, salty hit of pesto and Parmesan cheese makes this one my absolute favourite. Grazie mille Italia. 

You’ll Need

  • Basil pesto (homemade is best)
  • Parmesan cheese, grated
Rub with pesto and then cover with grated Parmesan. If you like, pop your corn under the grill for a melty finish that’s sure to impress!

Definitely the Mexican. We’ve had something similar before and it was amazing.
Although, we love corn so we’ll probably try them all.
