Salmon en Papillote
September 6, 2013Cooking en papillote is simpler than it sounds and ensures moist and flavourful fish.
Ingredients for two people
150 g | rice |
2 | salmon fillets |
1 knob | ginger, freshly grated |
2 | garlic cloves, crushed |
1 tbs | honey |
1 tbs | soy sauce |
1 bunch | spring onion, finely chopped |
150 g | green beans. finely chopped |
2 tbs | coriander, finely chopped |

For the rice
Bring a large pot of salted water to boil. Add the rice and cook it for 8-10 minutes until soft. Drain.
For the papilotte
Preheat the oven to 180C. Prepare a piece of baking paper and place the salmon on one half of the paper.
Combine the ginger, garlic, honey, and soy sauce in a jug, adding more soy sauce if desired. Brush the salmon with the sauce on both sides and reserve the remaining dressing. Top with the spring onion. To close the en papilotte see instructions below. Bake for 12-15 minutes.
For the beans
Bring a large pot of salted water to the boil and blanch the green beans until bright green (roughly 2 minutes). Next, drain and plunge them in a bowl of cold water to stop the cooking process.
To serve
Remove your en papillotes from the oven. Open them, scatter with coriander, and serve alongside the rice, bok choy, and maybe even a little extra slosh of soy sauce.
