A fresh, zesty, and creamy salmon dish which is best summed up in one word – sensational!
Ingredients for two people
|1||lemon, zested & juiced|
|250 g||smoked salmon, torn|
For the pasta
In a large pot, bring some salted water to the boil. Add the pasta to the boiling water and cook for approximately 10 minutes or until al dente, stirring regularly to ensure the pasta does not stick. Drain and return to pan.
Toss lemon zest, ricotta, salmon, capers & rocket with pasta. Season to taste with salt and pepper and add lemon juice if you like a bit of extra zing!
Divide this melt in your mouth pasta among places, it really is that simple – bon appetit!
