Pork Tenderloin with Baked Apples and BeetsJune 6, 2014
The night you dig into this flavorful concoction will be a night you’ll never forget!
Ingredients for two people
|3 sprigs||rosemary, destemmed & chopped|
|1 tbs||olive oil|
|2||beetroots, chopped into 2 cm cubes|
|300 g||pork tenderloin|
|2||apples, peeled & chopped into 2 cm cubes|
For the beetroot
Preheat oven to 180ºC. In a large bowl combine rosemary, oil, and a pinch of salt and pepper. Add the beetroot and toss to coat. Place the beetroot on a large baking tray and cook in the oven for 10 minutes.
For the pork
Season the pork with salt and pepper. After the beetroot has been cooking for 10 minutes, add the apples and the pork to the same baking tray. Cook the pork until cooked to your liking.
Slice the fillet across the grain in 2-3 cm thick slices. Serve along with the beetroot and apple.
