Pork Tenderloin with Baked Apples and Beets

The night you dig into this flavorful concoction will be a night you’ll never forget!

Pork tenderloin with baked beetroot apple and rosemary

Ingredients for two people

3 sprigs rosemary, destemmed & chopped
1 tbs olive oil
2 beetroots, chopped into 2 cm cubes
300 g pork tenderloin
2 apples, peeled & chopped into 2 cm cubes

For the beetroot

Preheat oven to 180ÂșC. In a large bowl combine rosemary, oil, and a pinch of salt and pepper. Add the beetroot and toss to coat. Place the beetroot on a large baking tray and cook in the oven for 10 minutes.

For the pork

Season the pork with salt and pepper. After the beetroot has been cooking for 10 minutes, add the apples and the pork to the same baking tray. Cook the pork until cooked to your liking.

To serve

Slice the fillet across the grain in 2-3 cm thick slices. Serve along with the beetroot and apple.
