A wonderful chicken recipe that will convert anyone into a brussels sprouts lover.
Ingredients for two people
|1 tbs||olive oil|
|350 g||chicken thigh|
|100 g||seedless grapes|
Oh no brussels spouts, right? Wrong! This recipe will get you on the superfoods band-wagon!
For the chicken
Preheat the oven to 200ºC. Add the potatoes to a baking tray, drizzle with the olive oil and season with salt and pepper. Bake for 15 minutes. Add the chicken thigh, brussels sprouts, grapes, and the rosemary to the same baking tray – try to spread everything out evenly – drizzle a little more olive oil and season with salt and pepper. We recommend you face your brussels sprouts down. This way the outsides will be nice and crispy and the insides nice and tender! Bake for a further 15 minutes or until the chicken is cooked through and the grapes begin to splinter.
Divide the baked chicken, potatoes, and bean sprouts between plates and enjoy!
