Cajun Fish with Succotash
October 13, 2014Succotash is a Native American corn salsa which wonderfully accompanies seafood and spices.
Ingredients for two people
1 cob | corn |
2 | tomatoes, diced |
1/2 | red onion, diced |
1 tin | red kidney beans, drained & rinsed |
1/2 | lemon, juiced |
1 small handful | coriander, finely chopped |
2 tsp | HelloFresh Cajun seasoning |
1 tbs | olive oil |
2 fillets | white fish |

Preheat oven to 180ºC.
For the succotash
Heat a little oil in a clean pan over a medium-high heat. Cook the corn cobs for about 5 minutes, making sure to turn them as you go. Make sure they are completely warmed through on all sides. Once the corn has browned and has warmed through, run a knife down all sides to remove all of the kernels. In a large bowl, combine the corn, tomatoes, onion, red kidney beans, coriander, and lemon.
For the fish
Combine the Cajun seasoning with the olive oil. Rub the spice mix on the fish. Heat some oil in a pan over medium-high heat. Place the fish skin side down into the pan. Cook for 3-4 minutes and then carefully turn your fish to cook for another 2 minutes. Cooking time will vary depending on the thickness of your fish. If the fish is a little uncooked, place in the oven for 3 minutes to finish the cooking process.
To serve
Serve your lovely Cajun fish with the fresh succotash. Enjoy!
