Winter Warming Cottage Pie
August 25, 2014You’ll go nuts over this scrumptious HelloFresh version of classic Cottage Pie!
Ingredients for two people
| 2 tbs | olive oil |
| 1 | brown onion, finely diced |
| 2 | garlic cloves, peeled & crushed |
| 1 | carrot, finely chopped |
| 350 g | beef mince |
| 1 tbs | Worcestershire sauce (or soy sauce) |
| 50 ml | red wine |
| 30 g | tomato paste |
| 1 bag | potatoes, peeled & quartered |
| 30 ml | milk |
| 1 tbs | butter |
| 1 small handful | parsley, roughly chopped |
| 70 g | mixed salad |
| 1 tbs | balsamic vinegar |

For the mash
Bring a large pot of salted water to boil. Once boiling throw in the potatoes and let them cook for 10-12 minutes.
Check that the potatoes are cooked by piercing them with a knife, if they are soft all the way through strain them and place them back in the pot. Add the milk and butter, season well with salt and pepper and then mash with a potato masher or fork to your desired consistency.
For the beef mince
Heat the olive oil in a large pan over medium-high heat. Add the brown onion, garlic, and carrot, saute for 5 minutes or until the vegetables have sweated down. Add the beef mince and cook for 3-5 minutes until all of the beef has browned. Add the Worcestershire sauce and the red wine and cook for a further 2 minutes to burn off the alcohol. Throw in the tomato paste and a pinch of salt, then bring to a simmer.
For the pie
Place the mince mixture into an oven-proof dish (or in large individual ramekins as we have), making sure you leave space for the mash! Spoon on the mash then smooth it out so that you have completely covered the mince, season with salt and pepper, and drizzle with some olive oil. Place the dish into the oven for 10 minutes or until the mash has turned golden brown, a crusty top makes it very authentic.
To serve
Remove from the oven and allow to cool for a couple of minutes – if you serve straight away the pie will fall apart. Using a spatula divide the shepherds pie between plates and garnish with some fresh parsley. Serve with the mixed salad drizzled with a little balsamic vinegar and olive oil if you like.
