Turkish Vegetable Bake with Garlic Yoghurt

    A warm, satisfying, and flavouful meal which you’ll definitely enjoy munching on!


    Ingredients for two people

    400 gsweet potato, peeled & cut into wedges
    2carrots, peeled, halved & quartered
    2 tbsolive oil
    2 tspHelloFresh turkish spice
    1 bulbgarlic
    2 rollsturkish bread
    2 tbsHelloFresh za’atar
    1/2lemon, juiced
    100 gyoghurt
    1 small handfulcoriander, roughly chopped

    For the vegetables

    Preheat the oven to 180ºC. Place the peeled sweet potato and carrot on to a baking tray. Combine the olive oil and the turkish spice in a small bowl and then add to the baking tray, toss the veggies well to coat with the turkish spice. Slice the whole garlic bulb horizontally and place the two pieces to the side of the baking tray (so they don’t get lost). Place the tray in the oven and roast for 30 minutes.

    For the turkish bread

    Cut the turkish rolls in half and place in the oven for 5 minutes or until they start to turn golden. Remove from the oven, drizzle with some olive oil, and then sprinkle over half the za’atar, reserving the rest for garnish, place the turkish rolls back into the oven and bake for a further 3-5 minutes or until they are nice and golden.

    For the garlic yoghurt

    Once the roast veggies are nearly ready (after about 25 minutes) remove the garlic cloves and let them cool slightly. Use the back of a fork to encourage oozey caramelised garlic to come out of its shell, remember these will have a strong flavour, so if you have a hot date tonight use a little less. Place them into a small bowl and mash them with the back of a fork. Add the yoghurt, and lemon juice to the bowl and mix well to combine. Taste and adjust seasoning accordingly with salt and pepper.

    To serve

    Remove the roast vegetables from the oven and divide them between plates. Drizzle over the garlic yoghurt, sprinkle over the remaining za’atar, garnish with some fresh coriander (if you like), and serve with the toasted Turkish za’atar bread.
