Pesto artichoke penne

    We’re nutty for this veggie number, and when you cook it you’ll understand why!


    Ingredients for two people

    250 gpenne pasta
    100 ggreen beans, top & tailed
    120 gartichokes, quartered
    1/2basil bunch, torn
    50 gpesto

    For the penne

    In a large pot bring some salted water to the boil. Add the pasta to the boiling water and cook for approximately 10 minutes or until “al dente”, stirring regularly to ensure the pasta does not stick. Strain the pasta, but save the boiling water as we are going to blanch the green beans quickly.

    For the pasta

    Place the green beans in the boiling water and cook for 2 minutes, strain and then refresh the beans under cold running water so they don’t overcook.

    Combine the green beans, artichokes, torn basil, pesto, and pasta in a salad bowl, season well with salt and pepper.

    To serve

    Divide your delicious pasta and dig in!
