Nutty Almond Quinoa with Veggies & Chicken

    This dish boasts an array of produce which comes together scrumptiously and is guaranteed to fill you up!


    Ingredients for two people

    1 tbsolive oil
    350 gchicken thighs, sliced
    1brown onion, diced
    1 knobginger, finely diced
    1chilli, diced
    1 packetHelloFresh Pilaf spice mix
    150 gquinoa
    300 mlboiling water
    100 gsnow peas, sliced diagonally
    1 handfulmint, chopped
    30 gslivered almonds

    Hellofresh recipe

    For the chicken

    Heat half of the olive oil in a large saucepan over a high heat. Add the chicken and cook, turning occasionally, for 2-3 minutes or until golden brown. Set aside in a warm place.

    For the quinoa

    Heat remaining oil in the pan over medium heat. Add onion, ginger, and chilli and cook, stirring, for 5 minutes or until onion softens. Add the HelloFresh spice mix and cook, stirring, for 1 minute or until aromatic. Add the quinoa and chicken and stir to combine. Pour in the hot water and bring to the boil. Reduce the heat to low and cook, covered, for 25 minutes. Throw in your snow peas and mint and continue to cook for a further 5 minutes.

    To serve

    Spoon among serving bowl and top with the almonds. Serve immediately.
