Nutty Almond Quinoa with Veggies & ChickenDecember 5, 2014
This dish boasts an array of produce which comes together scrumptiously and is guaranteed to fill you up!
Ingredients for two people
|1 tbs||olive oil|
|350 g||chicken thighs, sliced|
|1||brown onion, diced|
|1 knob||ginger, finely diced|
|1 packet||HelloFresh Pilaf spice mix|
|300 ml||boiling water|
|100 g||snow peas, sliced diagonally|
|1 handful||mint, chopped|
|30 g||slivered almonds|
For the chicken
Heat half of the olive oil in a large saucepan over a high heat. Add the chicken and cook, turning occasionally, for 2-3 minutes or until golden brown. Set aside in a warm place.
For the quinoa
Heat remaining oil in the pan over medium heat. Add onion, ginger, and chilli and cook, stirring, for 5 minutes or until onion softens. Add the HelloFresh spice mix and cook, stirring, for 1 minute or until aromatic. Add the quinoa and chicken and stir to combine. Pour in the hot water and bring to the boil. Reduce the heat to low and cook, covered, for 25 minutes. Throw in your snow peas and mint and continue to cook for a further 5 minutes.
Spoon among serving bowl and top with the almonds. Serve immediately.
