Indian Lamb & Carrot SaladMarch 21, 2014
Enjoy this fresh Indian-style salad which adds a zesty hit to the spicy lamb!
Ingredients for two people
|350 g||lamb mince|
|1 tbs||HF garam masala|
|1/2||coriander bunch, roughly chopped|
|3 tbs||olive oil|
|1||lemon, zested & juiced|
|1||ginger, small knob grated|
|1||garlic clove, crushed|
For the lamb
Heat some oil in a large pan over medium-high heat. Add the lamb mince, a generous pinch of salt, and the garam masala and cook for 3-5 minutes, using a spatula to break up the mince as finely as possible.
For the salad
Using a vegetable peeler or mandolin slicer if you have one, finely shave the carrots into long thin strips and place them into a large salad bowl. Add in the coriander and toss well to combine.
In a small bowl mix together the olive oil, cumin, lemon zest & juice, ginger, and garlic. Taste and adjust seasoning accordingly. Now add the dressing to the carrot salad and toss well to combine.
Divide the garam masala lamb between plates and then place a handful of the carrot salad on top. Enjoy this fragrant dish!
