Honey roasted pork with caramelised mash

    Ingredients for two people

    400 gpotatoes, peeled & chopped
    60 mlmilk
    2 tbsbutter
    2 tbsred wine vinegar (or balsamic)
    1red onion, thinly sliced
    2 tbsparsley, chopped
    3 tbshoney
    360 gpork tenderloin

    For the mash

    Preheat the oven to 180C. Bring a full pot of water to boil , add the potatoes and cook for 12 minutes. Strain and place the potatoes back into the pot. Add the milk, butter, salt and pepper to the pot and mash until you reach your desired consistency.

    Heat some oil in a pan over medium-high heat. Add the onion and the remaining vinegar, cook for 5 minutes or until the onion has softened and caramelised.

    Mix the caramelised onion and the parsley through your mashed potatoes and set aside

    For the pork

    In a small bowl whisk together the honey, the remaining vinegar, and salt and pepper. Rub the honey mixture all over the pork fillet. Place the fillet on a baking tray and drizzle a little extra honey over the top. Bake the pork for 13-15 minutes or until the pork is just cooked through (you can check this simply by making a small incision – it should be a very pale pink). Cooking time will vary depending on the thickness of your pork fillet. Remove from oven and leave to rest. Slice the pork into even portions.

    To serve

    Divide the potatoes between plates. Share the honey roasted pork between plates and enjoy!
