Dill Prawns with Rice Noodles

    A light and nutritious seafood dish that will have your taste buds swimming with delight.


    Ingredients for two people

    200 gvermicelli noodles
    1 tbsolive oil
    1carrot, sliced into matchsticks
    2garlic cloves, peeled & crushed
    300 gprawns
    1cucumber, sliced into matchsticks
    1lemon, juiced
    1dill, finely chopped

    Hellofresh recipe

    For the noodles

    Bring a pot of water to boil, add the vermicelli noodles and cook for 5 minutes. Remove the pot from the heat and leave the vermicelli noodles in for another 2 minutes. Drain and leave aside.

    For the stir fry

    Heat a frying pan or wok over a high heat, add the oil and stir fry the carrot and garlic for 2-3 minutes. Throw the prawns in and continue to stir fry for 3-4 minutes or until the prawns have changed colour and are cooked through (they’re really not good raw!).

    Remoce the pan from the heat and add the cucumber, lemon juice, and dill. Toss to combine.

    To serve

    Divide the noodles between bowls and top with the delicious prawn stir fry.
