Chicken san choi bau
September 10, 2013Chicken san choi bau is a fun and healthy dish which will win over the fussiest eaters.
Ingredients for two people
2 tbs | vegetable oil |
1 bunch | spring onion, chopped |
2 | garlic cloves, crushed |
350 g | chicken mince |
100 g | water chestnuts, rinsed, drained & sliced |
40 g | oyster sauce |
30 ml | soy sauce |
1/2 | iceberg lettuce, leaves separated |
1/2 cup | bean sprouts |
1/4 cup | coriander, finely chopped |

For the chicken
Heat the vegetable oil in a large frying pan over a medium-high heat. Add the spring onion and garlic and saute for 2-3 minutes. Now add the chicken mince and cook for 5 minutes. Using a wooden spoon to break up the mince, cook until the chicken is cooked through evenly and the liquid begins to evaporate. Once the chicken mixture is fairly dry, add the water chestnuts, oyster sauce, and soy sauce. Mix well until the chicken mixture is glossy and heated through.
To serve
Serve spoonful’s of chicken mixture into your separated lettuce leaves. Top with your fresh bean sprouts and coriander and then wrap your san choi bau mix into parcels and tuck in. This won’t taste as good if you are afraid of a bit of mess!
