Beef burger with spicy beetroot relish
August 16, 2013This healthy burger is as satisfying and flavoursome as a burger can possibly be!
Ingredients for two people
2 | beetroot, peeled & chopped |
1 | red onion, sliced |
1 tbs | balsamic vinegar |
2 tsp | mustard (seeded or dijon) |
300 g | beef mince |
40 g | breadcrumbs |
1 | egg, lightly whisked |
1 bunch | parsley, finely chopped |
2 | burger buns |
1 | tomato, sliced |
60 g | mixed leaf |

For the relish
Start by taking the burger buns out of the fridge and set the oven to preheat at 180C.
Bring a pot of salted water to boil, add the beetroots and cook for 10-12 minutes or until soft. Remove and strain. Once they have cooled slightly, grate the beetroot with a coarse cheese grater. Heat some oil in a pan over medium-high heat and add the red onion, cook for 3 minutes or until the onion has softened. Add the beetroot, balsamic vinegar, and the mustard, cook for a further 5 minutes or until the onion and beetroot become sticky.
For the burgers
In a large bowl combine the beef mince, breadcrumbs, egg, parsley, and season with salt and pepper. Make even sized balls of mixture for each of your buns, ensuring that the ingredients all stick together, and then flatten the balls out into burger patties.
While you cook your patties, place the burger buns into the oven for 5-7 minutes. Keep as eye on your buns so they don’t burn.
Heat some oil in a pan over medium-high heat and cook the burger patties for 3 minutes on each side until they have cooked right through.
