Celebrate Saint Patrick’s Day with a 60 second Guinness Cake

That’s right – the Irish nectar of the gods can be whipped up into a tasty moist Guinness Cake, that even looks like a pint of the good stuff. Is there any better way to celebrate today?

Patrick is the head chef at HelloFreshUK, and knows a delicious desert when he sees one. Not only are these moist chocolate cake enriched with the flavour of Guinness, they’re little pint shapes topped with a generous ‘head’ of cream cheese icing look just like a freshly poured glass of Ireland’s favourite beer. It also calls for buttermilk, a quintessentially Irish ingredient used in that other staple, soda bread.

Saint Patrick is of course the patron Saint of Ireland. Born poor and sold into slavery, he became a priest and took the gospel to pagan Ireland, using the shamrock to explain the concept of the holy trinity, and famously casting the snakes out of Ireland. A Catholic feast day, March 17 was traditionally a day to celebrate being Irish, independent and Catholic.

These days, Saint Patrick’s Day is more of a celebration of Irish diaspora around the world. Aussies, English and especially Americans like to trace their lineage back to the misty isle of green, leprechauns, tall tales and luck. In the spirit of Éire, we’ll be tucking into our delicious Guinness cakes and a slice of four ingredient soda bread too.
