Just one point: if you plunge your hot burnt pan into cold water, it will warp and never sit flat on your stove top again. Rather deglaze with a cup of boiling water after removing the food which can be rescued and when that has cooled add some bicarbonate of soda and let it stand overnight. Should come up beautifully the next day when scrubbed
